Yuzu Omakase has introduced a new beverage pairing at its Siam Square counter in Bangkok, a sequence of pours chosen to follow the meal rather than sit apart from it. The pairing arrives in three forms: a House Pairing that crosses sake, whisky, and plum liqueur, a Japanese Whisky Pairing built on aged single malts and a vintage blend, and a House Infusions flight for guests who prefer to stay alcohol free. Each is poured to match the rhythm of the kitchen, glass to course, from the opening bites to the final sweet note.

The idea is simple. True luxury is in the order of things, in what arrives when, and in how one taste prepares the mouth for the next. Yuzu treats the drink list the way it treats the fish, as a seasonal decision made for the guest in the seat, not a fixed card read from a shelf.

The House Pairing (Five Glasses, 2,500 THB)

The House Pairing is the broadest of the three, five glasses that travel across sake, whisky, and a plum liqueur as the courses change in weight and temperature. It is the pairing for a guest who wants range across a single meal.

The flight opens with Ozeki Ginkan Daiginjo (銀冠大関), a daiginjo grade sake from one of Japan's long established breweries, polished and clean for the lighter first courses. It moves to Born Dreams Come True Junmai Daiginjo (夢は正夢), a junmai daiginjo from Fukui whose name translates as dreams come true, a fuller and more aromatic pour for the richer fish. It opens with Hakushu 18 Years (白州 18年), the lightly wooded, green edged single malt from Suntory's forest distillery. It continues with Yamazaki 18 Years (山崎 18年), the deeper, sherry influenced single malt that built Suntory's reputation abroad. It closes with Hibiki 21 Years (響 21年), an aged blend that has been recognised among the most awarded Japanese whiskies of its class.
